BBQ Coffee-Crusted Pork Tenderloins With Redeye BBQ Sauce

BBQ Coffee-Crusted Pork Tenderloins With Redeye BBQ Sauce


Ingredients
1 1⁄2 lbs pork tenderloin (2 to 3 tenderloins)

For the rub
4 tablespoons ground coffee
4 teaspoons coarse salt (kosher or sea)
4 teaspoon dark brown sugar
2 teaspoons sweet paprika
1 1/4 teaspoon fresh ground black pepper
1 1/4 teaspoon garlic powder
1 1/4 teaspoon onion powder
3/4 teaspoon ground cumin
3/4 teaspoon ground coriander
3/4 teaspoon unsweetened cocoa powder
2 tablespoons canola oil

For the Redeye BBQ Sauce
1 Tbs Butter
1 slice bacon, finely chopped
1⁄2 medium onion, finely chopped
3⁄4 cup brewed strong coffee (or espresso)
3⁄4 cup ketchup
1⁄4 cup Worcestershire sauce
1⁄4 cup heavy cream
2 tablespoons Dijon mustard
2 tablespoons molasses
2 tablespoons brown sugar
coarse salt & freshly ground black pepper (kosher or sea)

Method

1. Place a tenderloin on your work surface. Remove the silver skin (the thin, translucent, sinew-like covering on the outside) by using a knife to trim it away from the meat. About 3 inches from the end of the tail (the skinny end), make a crosswise cut, slicing about halfway through the meat. This will enable you to fold the tail back over the rest of the roast, giving the tenderloin a roughly cylindrical shape which will help it cook more evenly. Tie the tail in place with butcher's string. Repeat with the remaining tenderloin(s). Place the tenderloins in a baking dish.

2. Place the coffee, salt, brown sugar, paprika, pepper, garlic and onion powders, cumin, coriander, and cocoa in a small bowl and stir to mix. Sprinkle this rub all over the tenderloins, patting it onto the meat with your fingertips. Drizzle the oil over the pork and rub it on well. Let the pork marinate in the refrigerator, covered, for at least 4 hours or as long as overnight.

3. Set up the grill for direct grilling and preheat to medium-high. If using a gas grill, place all of the wood chips or chunks in the smoker box or in a smoker pouch and run the grill on high until you see smoke, then reduce the heat to medium-high. If using a charcoal grill, preheat it to medium-high, then toss all of the wood chips or chunks on the coals.

4. When ready to cook, brush and oil the grill grate. Place the pork tenderloins on the hot grate and grill until cooked through, 3 to 4 minutes per side (12 to 16 minutes in all). To test for doneness, insert an instant-read meat thermometer into the meat: The internal temperature should be about 160 degrees F.
5. Transfer the grilled pork to a cutting board and let rest for about 3 minutes. Remove and discard the strings, then slice the tenderloins crosswise on a diagonal and serve at once with the Redeye Barbecue Sauce on the side.

For the sauce:
Place the bacon and onion in a heavy saucepan cook over medium heat until lightly browned, 3 minutes, stirring often. Stir in the remaining ingredients and gradually bring to a boil. Reduce the heat slightly and simmer the sauce until thick and richly flavored, 10 minutes, whisking from time to time. Correct the seasoning, adding salt and pepper to taste.

Arugula, Radish, Mint and Pea Salad

Arugula, Radish, Mint, and Pea Salad

Ingredients:

1 cup chopped fresh mint
6 tablespoons white wine vinegar
1/4 cup extra-virgin olive oil
1/4 cup mayonnaise
1/4 cup dijon mustard
12 ounces baby arugula
20 radishes, trimmed and sliced thin
2 cups peas - fresh or thawed if frozen
Salt and pepper

Method:

Whisk mint, vinegar, oil, mayonnaise, and mustard together in bowl until combined.

Toss arugula, radishes, and peas together in large bowl. When ready to serve, toss with dressing until combined. Season with salt and pepper to taste. Serve.


Roasted Smashed Potatoes and Ketchup

This recipe is designed to work with potatoes 1½ to 2 inches in diameter; do not use potatoes any larger. It is important to thoroughly cook the potatoes so that they will smash easily. Watch the potatoes carefully in the last 20-30 minutes - they should be well-browned and crispy but not burnt (it may be necessary to remove smaller potatoes that are done early).  A potato masher can also be used to “smash” the potatoes.


Ingredients:

4 pounds small Red Bliss potatoes (about 30 - 35), scrubbed (see note)
3/4 cup tablespoons extra-virgin olive oil
2 teaspoon chopped fresh thyme leaves
Kosher salt and ground black pepper

Equipment:

3 rimmed sheet pans, or 2 rimmed pans and a potato masher (or something else that can smash potatoes flat!)

Method:

1. Adjust oven racks to top and bottom positions and heat oven to 500 degrees. Arrange potatoes on rimmed baking sheets, pour ¾ cup water into baking sheet, and wrap tightly with aluminum foil. Switching pans half way through cooking time, cook on bottom and middle rack until paring knife or skewer slips in and out of potatoes easily (poke through foil to test), 25 to 30 minutes. Remove foil and cool 10 minutes. If any water remains on baking sheet, blot dry with paper towel.

2. Using 6 Tbs oil, drizzle 3 tablespoons oil over each pan of potatoes and roll to coat. Space potatoes evenly on baking sheet and place second baking sheet on top; press down firmly on baking sheet, flattening potatoes until 1/3 to 1/2 inch thick. 

Sprinkle pans with thyme leaves and season generously with salt and pepper; using 6 tablespoons oil, drizzle each pan evenly with 3 tablespoons. 

Roast first pan of potatoes on top rack 15 minutes. After 15 minutes, transfer pan to bottom rack to continue to roast until well browned, 20 to 30 minutes longer. Meanwhile, place the second pan on the top rack to roast for 15 minutes.  After 15 minutes, transfer second pan of potatoes to the lowest available rack and continue to roast for 20-30 minutes.  As potatoes finish roasting, transfer them to a serving dish and keep warm.  Serve as appetizer with Ketchup.

Apple Dumplings

The recipe below makes 6 apple dumplings - double and make 12 for 10 people

Ingredients:

Crust

2 1/2 cups (325 grams) all-purpose flour
1 tablespoon (15 grams) granulated sugar
1 teaspoon (5 grams) fine sea or table salt
1 cup (8 ounces or 225 grams) unsalted butter, very cold
About 1/2 cup cold water

Filling

3 large apples (about 3″ across), any kind you like to bake with
Half a lemon
1/2 cup (110 grams) light or dark brown sugar
1/2 teaspoon ground cinnamon
A few gratings of fresh nutmeg, or a couple pinches of ground
Pinch of salt
1 tablespoon (15 grams) butter, cut into 6 pieces, kept cold
1 large egg, for glaze

Heavy Cream - to serve

Method:


Make the crust:
By hand : In a large bowl, combine the flour, salt and sugar. Work the butter into the flour with your fingertips or a pastry blender until mixture resembles a coarse meal and the largest bits of butter are the size of tiny peas.  Add cold water and stir with a spoon or flexible silicone spatula until large clumps form. Use your hands to knead the dough together, right in the bottom of the bowl. If necessary to bring the dough together, you can add another tablespoon of water.

Or With a food processor: In the work bowl of a food processor, combine flour, salt and sugar. Add butter and pulse machine until mixture resembles a coarse meal and the largest bits of butter are the size of tiny peas. Turn mixture out into mixing bowl. Add cold water and stir with a spoon or flexible spatula until large clumps form. Use your hands to knead the dough together, right in the bottom of the bowl. If necessary to bring the dough together, you can add the last tablespoon of water.

Both methods: Wrap dough in a sheet of plastic wrap and refrigerate for at least one hour, or up to 48 hours, or you can quick-firm this in the freezer for 15 to 20 minutes. Longer than 2 days, it’s best to freeze it until needed.

Heat your oven: To 375°F

Assemble the dumplings: Peel and halve your apples. Use the large side of a melon baller, if you have one, or a tablespoon measuring spoon, to scoop the core out of each half. Squeeze the juice of half a lemon over the apples. In a small bowl, combine the brown sugar, cinnamon, nutmeg, and salt. Mound a heaped tablespoon of the mixture in the scooped-out center of each apple half. 

On a well-floured counter, roll your dough out to a 12-by-18-inch rectangle and divide into six 6-inch squares. If dough gets too soft or warm while you’re rolling it, continue to the square stage, but then transfer the squares to a parchment-lined baking sheet and chill them in the freezer for a couple minutes, until they’re semi-firm again.

Place a filled apple half, cut side-up, in the center of each dough square. Bring corners up to meet each other over the center – if it feels tight, or as if you’re short of dough, make sure that the dough underneath is flush with the apple curve; it holds a lot of slack – and seal the seams together, pinching with your fingertips.

Bake dumplings: Arrange dumplings in a buttered 9-by-13-inch baking dish. Whisk egg together with one teaspoon water to form a glaze. Brush glaze over the tops and exposed sides of dumplings. Bake for 40 to 45 minutes, until pastries are puffed and bronzed on top.

Serve warm with heavy cream to pour over them like they did in the 19th century!

Black Eyed Pea Dip

Ingredients

1 (8-oz.) pkg. cream cheese, softened
2 (15-oz.) cans black-eyed peas, rinsed, drained, and divided
1 1/2 tablespoons fresh lime juice, divided
1 teaspoon hot sauce
1/2 teaspoon kosher salt, divided
1 cup diced ham
1/4 cup finely chopped scallions
1/4 cup finely chopped roasted red bell pepper
1 (8-oz.) block Monterey Jack cheese, shredded and divided
2 (4-oz.) fresh tomatoes, chopped (about 1 cup)
2 tablespoons finely chopped fresh cilantro
1 tablespoon olive oil
1 tablespoon minced fresh jalapeño

Tortilla chips / Celery / Toast / Etc for Dipping

Method

Preheat oven to 375°F. Process cream cheese, 1 cup black-eyed peas, 1⁄2 tablespoon lime juice, hot sauce, and 1⁄4 teaspoon salt in a food processor until creamy and smooth (about 1 minute). Place mixture in a large bowl.

Stir remaining black-eyed peas, diced ham, scallions, bell pepper, and 4 ounces Monterey Jack cheese (1 cup) into cream cheese mixture. Spread mixture into a lightly greased 2-quart baking dish. Sprinkle with remaining 4 ounces cheese.

Bake, covered with aluminum foil, in preheated oven 20 minutes. Remove foil, and bake for 10 to 15 more minutes or until hot and bubbly. Let stand 10 minutes.

Stir together tomatoes, cilantro, olive oil, jalapeño, remaining 1 tablespoon lime juice, and remaining 1⁄4 teaspoon salt in a small bowl. Top black-eyed pea dip with tomato mixture using a slotted spoon. Serve with tortilla chips.

This makes one 9 inch round cake - 12 small servings

This can be made in stages - the Ice Cream Center and Cake can both be made several days ahead of time.  The Cake and Ice Cream should be frozen when assembled.  Once assembled and frosted (before browning), the cake can keep in the freezer for up to one day.

The Marshalls may own a cooking blowtorch (if you'd like to use it - let them know - they can probably bring it to dinner and we can toast the Meringue there).

Ingredients:

Ice Cream Center

Nonstick spray oil, to coat the bowl
6 cups (from 3 pints) ice cream, one flavor or a mix of flavors you like

Cake

6 tablespoons (85 grams) unsalted butter, at room temperature
3/4 cup (145 grams) firmly packed dark brown sugar
2 tablespoons (25 grams) granulated sugar
1 large egg
1 large egg yolk (save white for frosting)
3/4 cup (175 ml) buttermilk 
1 teaspoon (5 ml) vanilla extract
1/2 cup (41 grams) Dutched cocoa powder
1 cup (125 grams) all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon table or fine sea salt

Meringue Frosting

3 large egg whites
Pinch of cream of tartar
2/3 cup granulated sugar
1 teaspoon vanilla extract
Pinch or two of salt

Flambé Finish (optional)

1 ounce (2 tablespoons) brandy or kirsch

Method

Make/mold the ice cream center:

Coat a 1.5-quart bowl (6 cup; rim should be about 9 inches in diameter) lightly with nonstick spray. Line with two pieces of plastic wrap with a generous overhang, overlapping them in the center.

Scoop ice cream into bowl in any pattern or non-pattern you wish. Use the overhang to cover exposed ice cream and press it mostly flat. Place this ice cream bowl in the freezer for 3 to 6 hours, or overnight, until fully firm again.

Make the cake:

Heat oven to 350°F (175°c). Line the bottom of 9 inch round cake pan with parchment paper, and butter or spray the parchment and exposed sides of the pan. In a large bowl, use a mixer to beat the butter and sugars until fluffy; scrape down bowl. Add the egg, yolk and vanilla and beat until combined, then the buttermilk and mix again. Scrape the bowl down well and don’t worry if the batter looks uneven. 

Place your flour, cocoa, baking soda, baking powder and salt in a sifter and sift over the batter bowl. Stir on low until just combined; scrape down bowl a final time. Scoop batter into prepared pan and smooth flat. 

Bake for 25 to 35 minutes, until a toothpick inserted into the center comes out clean. Let cool for 5 to 10 minutes in cake pan on cooling rack, then flip out onto rack.  Put the cooling rack with the cake right into the freezer to fully cool and firm up, about 30 minutes (or longer if making ahead)

Place cake on serving plate. Use the outline of the ice cream bowl to mark the size to which you want to trim the cake, and then cut away. Use the plastic covering the bowl/mold as handles to yank the firm ice cream out of the bowl and onto the cake. Trim the cake further if needed. Return the ice cream-topped  cake to the freezer to firm again, 1 to 2 hours.

Make the meringue: Beat the egg whites with a pinch of cream of tartar in an electric mixer until satiny peaks form and then beat in the sugar a spoonful at a time until all of the sugar has been added and then keep running the mixer until the meringue is stiff and shiny. Beat in the salt and vanilla.

Frost the cake: Spread the meringue in big swirls over the ice cream and cake base. Return the cake to the freezer for as long as needed (it’s best to let it freeze for another hour at least). You can also leave it in for a full day.

Toast the meringue in one of two ways.

Oven method: Preheat the oven to 500 degrees. Bake the cake until the meringue peaks are golden, about 4 minutes.

Blowtorch method: Torch the cake until toasted all over.

Both methods: If you’re not going to need the cake right now, return it to the freezer until needed. Take out 5 minutes before serving.

Flambé finish (optional): Fill a mug halfway with very hot water. Place alcohol in a shot glass and set it inside the hot water (not letting the water spill in) until the alcohol is very warm to the touch, about 5 minutes. Remove the now-warm cup of alcohol from the water; discard the water.

 Hold the hot cup of alcohol in a oven mitt-ed hand. Light a match with the other. With the cake below you, begin to tip the alcohol as slowly as possible to the edge of the cup. Light the alcohol with the match (it will be a low, gentle flame).  Drizzle this burning alcohol over the cake. You can let it flame out (15 to 30 seconds) or it can be blown out.

To serve: Serve cake in thin wedges, cutting with a very sharp or serrated knife. Cake keeps in the freezer for easily a week (and probably longer); the meringue holds up surprisingly well.

Boston Baked Beans

Serves 8 to 12

The beans can be made ahead. After cooking, cool them to room temperature and refrigerate in an airtight container for up to 4 days.

Ingredients

8 ounces salt pork, trimmed of rind and cut into 1/2-inch cubes
4 ounces (4 slices) bacon, cut into 1/4 -inch pieces
2 medium onions, chopped fine
1 cup plus 2 tablespoons mild molasses
3 tablespoons brown mustard
2 pounds (about 5 cups) dried small white beans, rinsed and picked over
Salt
2 teaspoon cider vinegar
Ground black pepper

Method

Adjust oven rack to lower-middle position; heat oven to 300 degrees.

Add salt pork and bacon to 8-quart Dutch oven; cook over medium heat, stirring occasionally, until lightly browned and most fat is rendered, about 7 minutes. Add onion and continue to cook, stirring occasionally, until onion is softened, about 8 minutes. Add 1 cup molasses, mustard, beans, 2 1/2 teaspoons salt, and 18 cups water; increase heat to medium-high and bring to boil. 

Cover pot and set in oven. Bake until beans are tender, about 4 hours, stirring once after 2 hours. Remove lid and continue to bake until liquid has thickened to syrupy consistency, 1 to 1 1/2 hours longer. Remove beans from oven; stir in remaining 2 tablespoons of molasses, vinegar, and additional salt and pepper to taste. 

South Carolina Slaw

 Source - Yields 6 cups (consider increasing by 1/2 for 12 people)

To make ahead, allow the dressing mixture to cool before tossing it with the shredded carrots and sliced cabbage. Combined with a cool dressing and stored in an airtight container in the refrigerator, this Carolina slaw should last three to five days.

Ingredients

1/2 head thinly sliced cabbage (about 1 lb.)
1 cup grated carrot
1/2 cup apple cider vinegar
1/4 cup sugar
1/4 cup vegetable oil
2 Tbsp. Dijon mustard
2 tsp. dry mustard
1 tsp. celery seeds
1 tsp. kosher salt
1/2 tsp. freshly ground black pepper

Method

Make coleslaw dressing:

Place cabbage and carrot in a bowl. Whisk together vinegar, sugar, vegetable oil, Dijon mustard, dry mustard, celery seeds, kosher salt, and freshly ground black pepper in a saucepan until sugar dissolves.

Bring to a boil over medium-high heat.

Combine cabbage and dressing:

Pour over cabbage mixture; toss to coat. Serve immediately.



Rhode Island Pizza Strips

Ingredients

For the biga:
⅛ tsp. active dry yeast
1 cup bread flour, or all-purpose flour
For the dough and assembly:
1⅛ tsp. active dry yeast
4 cups bread flour, or all-purpose flour
1 Tbsp. kosher salt
3 Tbsp. plus 1 tsp. extra-virgin olive oil, divided

For the sauce:
One 28-oz. can crushed tomatoes
2 Tbsp. extra-virgin olive oil
2 tsp. dried basil
2 tsp. granulated garlic
2 tsp. dried oregano
2 tsp. dried parsley
2 tsp. kosher salt
¼ tsp. freshly ground black pepper

Method

Make the biga: In a medium bowl, stir together the yeast and ½ cup of room-­temperature water and set aside until foamy, about 5 minutes. Using a fork, mix in the flour until a shaggy dough forms. Cover with plastic and set aside in a warm place until doubled in size, about 4 hours. Transfer to the fridge to ferment for 10–12 hours.

Make the dough: In a stand mixer fitted with a dough hook, stir together the yeast and 1⅔ cups of room-temperature water and set aside until foamy, 5–10 ­minutes. Add the flour, salt, and the reserved biga and mix on medium-low until the dough is smooth and elastic, 6–8 minutes. Grease a large bowl with 1 teaspoon of the oil, then shape the dough into a ball and transfer to the bowl to rise. Cover and set aside in a warm place until doubled, 1–2 hours.

Meanwhile, make the sauce: In a medium bowl, stir together the tomatoes, oil, basil, granulated garlic, oregano, ­parsley, salt, and black pepper and set aside.

Position a rack in the center of the oven and preheat to 425°F. Grease the bottom and sides of an 18- by 13-inch rimmed baking sheet with the remaining 3 tablespoons of oil, then turn the dough out onto it. Gently push and stretch the dough to the edges of the baking sheet; if it’s too elastic, set aside for 10–15 minutes, then repeat. Spoon the sauce onto the dough, then use the back of a spoon to spread it in an even layer, leaving a ½-inch border of crust. Set aside until the dough is puffed, 20–30 minutes.

Bake, rotating the baking sheet halfway through, until the crust is golden and crisp on the bottom and the sauce has reduced slightly, 20–25 minutes. Transfer the ­baking sheet to a wire rack to cool to room temperature.

Using scissors or a knife, halve the pizza lengthwise. Rotate the baking sheet a quarter turn, cut the pizza into 3- to 4-inch strips, and serve.


Nashville Hot Chicken Smashed Meatball Sandwiches

Serves 12

Ingredients


Meatballs:
2 pounds ground chicken
2 large eggs
2/3 cup breadcrumbs
1/4 cup milk
1 1/2 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon granulated garlic
1/2 teaspoon dried oregano
1/2 teaspoon red pepper flakes
Couple dashes hot sauce

To Coat:
4 large eggs whisked
1 cup all-purpose flour
2 cups panko breadcrumbs

Oil for browning

Sauce:
1/4 cups plus 2 tablespoons cayenne pepper
2 tablespoons light brown sugar
1 teaspoon chili powder
1 teaspoon granulated garlic
1 teaspoon granulated onion
1 teaspoon paprika
1.5 cups vegetable oil
Kosher salt and coarse black pepper

Ranch dressing for serving
Pickles for serving

30 - 36 Slider Buns (Small Hamburger Buns)

Method

Preheat Oven to 425 degrees

In a large bowl, combine the ground chicken, egg, breadcrumbs, milk, salt, black pepper, granulated garlic, oregano, red pepper flakes, and hot sauce until well combined. Shape into 30-36 balls (one for each bun).

Set up a dredging station by placing the flour in one bowl, the whisked eggs in a second bowl and the panko breadcrumbs in a third. Dredge the meatballs by rolling in flour first, then in egg and finally in panko until well coated. Set aside.

Heat large frying pan over high heat for a minute, then coat with about 2 tablespoons oil. Working in batches, sear meatballs in the pan for 30 seconds to 1 minute before using a heavy spatula to flatten them until they’re about 1/2-inch-thick.  Transfer to a large rimmed baking sheet about 1-inch apart. Bake until the meatballs are golden brown and just cooked through, about 12 to 14 minutes.

To make the Nashville hot sauce, carefully whisk together the spices, and brown sugar.  Gently heat the 3/4 cup oil.  Carefully whisk the spices into the hot oil until dissolved and evenly combined. 

Serve meatball sandwiches with hot sauce, ranch dressing and pickles. Enjoy!

Mini Cornbread Waffles with Cranberry sauce and Bacon

Prepare mini waffles using recipe below.  Top with your favorite cranberry sauce and a small piece of prepared thick-cut bacon (maple glazed if desired). 


Ingredients

3/4 cup (100 grams) coarse yellow cornmeal

3/4 cup (100 grams) all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon kosher salt

1 tablespoon (15 ml) molasses

1 cup (235 ml) buttermilk, well-shaken

4 tablespoons (55 grams) melted unsalted butter

1 large egg

Method

Combine cornmeal, flour, baking powder, baking soda and salt in the bottom of a medium bowl. In a smaller bowl, whisk molasses, butter, buttermilk and egg until combined. Pour into dry ingredients and stir to combine. Let batter rest for 10 minutes. Heat waffle iron according to manufacturer’s instructions; I found a medium heat just fine here.

Brush waffle iron with melted butter or coat with nonstick spray. Drop 1 tablespoon puddles of batter onto iron (several at a time).  Cook until lightly browned.

Waldorf Salad

NOTE:  If using yogurt, omit the lemon juice. You may also want to add a little honey to balance the tartness of the yogurt.

Ingredients

3/4 cup mayonnaise (or plain yogurt)

2 tablespoons lemon juice

1 teaspoon kosher salt

4 sweet apples, cored and chopped

1/2 cup raisins

2 cups thinly sliced celery

2 cups chopped, slightly toasted walnuts

Method

In a medium sized bowl, whisk together the mayonnaise (or yogurt), lemon juice, salt and pepper.

Stir the apple, celery, grapes, and walnuts into the bowl with the dressing.

For the freshest, crispest salad, make Waldorf salad no more than an hour before serving.  Keep refrigerated.


Blissful Sweet Potato Salad

 Combination of this and this

Yield 10 as a side

Ingredients

  • Olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 1.5-pounds sweet potatoes 
  • 3 medium (6 ounces) shallots, halved lengthwise and peeled
  • 12 ounces kale or spinach leaves, torn or chopped into bit-sized pieces
  • 4.5 tablespoons sherry vinegar or balsamic vinegar, plus more to taste
  • 1.5 teaspoons smooth dijon mustard
  • 1.5 to 3 tablespoons water, as needed
  • 1/3 cup pomegranate arils
  • 3/4 cup toasted, salted pepitas (optional)

Method

Prepare the sweet potatoes and shallots: Heat oven to 400°F and line a large baking sheet with parchment paper. Cut potatoes in half lengthwise, and then into 1/4-inch half-moon slices. Drizzle or brush parchment lightly with olive oil and sprinkle the oil with salt and pepper. Arrange sweet potato slices in one layer on parchment. Coat lightly with more oil, salt, and pepper.

Place shallot halves on a square of foil and drizzle lightly with olive oil and kosher salt. Tightly seal foil around them into a little packet and place on the baking sheet with potatoes.

Roast potatoes and shallots for 20 minutes, until lightly brown underneath. Flip the pieces and carefully open the foil packet with the shallots. Return the tray to the oven for another 5 to 15 minutes, checking every five minutes until the potatoes are evenly brown and the shallots are tender (remove shallots from oven if they finish first). 

Make the dressing: In a blender or food processor, whiz warm shallots with 6 tablespoons olive oil until smooth, scraping down the bowl as needed. With the machine running, add dijon mustard and 4.5 tablespoons vinegar, blending until smooth. Season well with salt and pepper, blending again. Taste and adjust with more vinegar, salt, and pepper as needed. If the dressing is very thick, thin with 1 to 2 tablespoons water.

Do ahead: The recipe can be paused here until needed. 

To serve: In a large wide bowl or salad plate, toss greens with half the dressing and season with additional salt and pepper. Arrange roasted potatoes over the greens, fanning out slices if you wish. Sprinkle salad with pomegranate and pepitas (if using) and drizzle some of the remaining dressing over, to taste. Once dressed, serve salad right away, with extra dressing on the side.


Pumpkin (Spice Latte) Tiramisu

Yield: 12 Servings

Ingredients

  • 2 1/2 cups heavy cream 
  • 3/4 cup granulated sugar
  • 1 1/2 cups mascarpone cheese (room temperature)
  • 1 (15-ounce) can pumpkin puree
  • 1/2 cup light brown sugar
  • 3/4 teaspoon ground ginger
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon allspice
  • 1/4 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon kosher salt
  • 2 cups brewed coffee, cooled
  • About 36 dry ladyfingers (aprox 3 (7-ounce) packages)
  • Chocolate shavings and candied ginger, for garnish - optional

Method

Bring mascarpone cheese to room temperature.

In a medium bowl, combine 1 1/2 cups heavy cream and 1/2 cup granulated sugar until sugar dissolves.  Beat at medium speed until soft peaks form.  Do not overbeat.  In large bowl, beat the mascarpone until softened and smooth, add the pumpkin puree, brown sugar, ginger, cinnamon, allspice, cloves, salt and nutmeg and mix to combine. Fold whipped cream into pumpkin mixture in batches until totally incorporated.

In a medium bowl, whisk the brewed coffee with 2 tablespoons of the granulated sugar until it’s dissolved. Dip both sides of ladyfingers in the coffee and arrange them in a single layer in a 9X13 inch dish. Spread 1/2 cup of the pumpkin mousse on top. Repeat, ending with a layer of the pumpkin mousse. Cover and refrigerate the tiramisu overnight (minimum 8 hours).

In a large bowl, using an electric mixer, beat the remaining 1 cup of cream with the remaining 2 tablespoons of granulated sugar until soft peaks form. Dollop the whipped cream over the tiramisu, garnish with shaved chocolate and candied ginger and serve.

Plum Gin Fizz

Plum Puree

Ingredients

2 pounds fresh plums, halved and pitted
⅓ cup granulated sugar

Method

Preheat oven to 400°F. Toss together plums and sugar on a large rimmed baking sheet until fully coated; spread in a single layer. Roast in preheated oven until fruit is soft and juicy, about 10 minutes, stirring halfway through roasting time. Let cool 5 minutes. Scrape fruit and any liquid on baking sheet into a food processor or blender; pulse until smooth, 5 to 8 pulses. Pour through a fine wire-mesh strainer into a medium bowl, pressing puree using a rubber spatula. (This may take about 10 minutes.) Discard pulp. Refrigerate, uncovered, until completely cool, about 20 minutes. (You should have about 2 cups plum puree, enough for 9 cocktails.)

Plum puree may be stored in an airtight container in refrigerator up to 1 week.


Cocktail - 1 drink

Ingredients

¼ cup (2 ounces) gin (such as Empress 1908, The Botanist, or Hendrick's Midsummer Solstice)
1 large egg white
1 tablespoon fresh lemon juice
Ice cubes
¼ cup club soda

Method

Combine gin, egg white, lemon juice, and 31/2 tablespoons plum puree in a dry cocktail shaker without ice. Place lid on shaker; shake vigorously to combine, about 15 seconds. Add enough ice to shaker to fill three-fourths of the way up. Place lid on shaker, and shake until well chilled, about 10 seconds. Strain into a chilled highball glass filled with ice. Top with club soda, and garnish with lavender sprig.

Rocky Road (no churn) Ice Cream


Ingredients

1 (14-ounce) can sweetened condensed milk
1/2 cup (about 1 5/8 ounces) unsweetened cocoa powder
1 teaspoon vanilla extract
Pinch of table salt
2 cups heavy whipping cream, chilled
6 ounces semisweet chocolate baking bars (such as Guittard), chopped
½ cup finely chopped roasted salted almonds or peanuts
1½ cups mini marshmallows

Method

1) Whisk together condensed milk, cocoa powder, vanilla, and salt in a large bowl until smooth, about 30 seconds. Beat cream with an electric mixer fitted with a whisk attachment on high speed until stiff peaks form, about 2 minutes.

2) Gently fold in one-third of whipped cream into condensed milk mixture. Working in batches, fold remaining whipped cream into condensed milk mixture until no streaks remain, being careful not to deflate cream. 

3) Spread half of the ice cream base into a freezer-safe storage container (Such as a 9×5 metal loaf pan). Sprinkle half of the nuts (almonds or peanuts), marshmallows, and chopped chocolate over the ice cream base and swirl the mix-ins into the ice cream base. 

4) Add the remaining ice cream base (spreading into an even layer) followed by the remaining mix-ins. Press/stir some of the mix-ins into the ice cream but leave some mix-ins exposed on top of the ice cream

5) Place ice cream in the freezer, and freeze until firm, at least 3 hours or up to 12 hours. Remove from freezer 5 minutes before serving. Store ice cream in an airtight container in freezer for up to 1 month.
